What happens to your file

The video is decoded and re-encoded as H.264 with AAC sound in a fast-start MP4 — the one file phones, TVs, Windows, Macs and every browser play — at a quality most people cannot tell from the original.

Old phone clips are small and low resolution; nothing is enlarged — the MP4 is the same picture in a modern wrapper.

No — the pixels are what the old phone recorded. It will play everywhere, which the 3GP did not.
